Cranberry Muffins

So if your grocery stores are like mine, they stocked up on fresh cranberries for the holiday season and now they are on clearance sale so they can get rid of them. Since I can only find fresh cranberries during the holidays, and since they freeze so well, I stock up on them this time of year.


I'm not really much of a cranberry sauce or chutney type of person, but I LOVE having fresh cranberry muffins. You can even add orange juice instead of the milk, or you can substitute the cranberries for blueberries. I have even tried this recipe with strawberries and it turned out yummy!

CRANBERRY MUFFINS
3/4 C Whole Wheat Flour
3/4 C All Purpose Flour
1 C Old Fashioned Oats
1/3 C Brown Sugar
1 tsp Cinnamon
1 tsp Salt
1 Tbsp Baking Powder
1 Egg
1 C Milk
1/4 C Oil
1 C Fresh Cranberries

Heat oven to 425F. Combine dry ingredients and blend well. In a separate bowl, combine egg, milk, and oil and mix well.v Stir the liquid ingredients into the dry and stir until just blended. Stir in the cranberries. Spoon into muffin cups. Bake 15-20 minutes until lightly browned. Let stand 5 minutes before removing.
